[RECIPE] Potato Pie (4 servings)

An Italian recipe very simple and delicious. You have to know that the totality of our ingredients were bought at the local cooperative of food producer that gather farmers from the region. These producers are committed to limit as much as possible the use of pesticide during the production: some ingredients are certified as organic (BIO), other didn’t receive the certification but broadly respect the BIO standards.We try to limit our consumption of diary products, and when we do consume them we make sure to buy them without packaging –we always bring with us our boxes and bags– and locally, if not directly from the producer.

Ingredients :

  • 8 small potatoes
  • 1 onion
  • 1 zucchini or another green veggie
  • 3 eggs
  • 200g of cheese (it works also without cheese, but since it’s still cold here we opted for more calories)
  • salt
  • pepper
  • oil

Preparation :

1) Peal the potatoes, cut them in small pieces -this saves energy and cooking time- and cook them directly in water or steaming.

If you can easily insert your fork in the potatoes it means they are cooked. Make sure they are soft enough to press them.

2) Cut in small pieces the onions and start to fry them in EVO oil. 

We buy our oil every year in Italy when we go to visit our family. We are in contact with the producer directly, and we buy 5 liters tanks trying to avoid as much waste as possible.

 

 

3) Meanwhile cut any green veggie you like (here we used zucchinis) in small pieces as well.

(Optional cut in small pieces a bit of cheese to add later if you feel like it!)

4) Add the zucchinis to the onions (when they are getting brownish). Add some salt and pepper and keep going until it’s cooked.

5) Whenever the potatoes are cooked, throw them in a big dish, add salt and pepper (or any spices you like); if you opted for the cheesy version it’s time to add it… Smash and mix the whole thing until you get a sort of homogeneous dough (a fork can do the job if everything has been cooked enough!).

You can now start pre-heating the oven at 180°C.

6) When the veggies are cooked, add them to the potatoes and add the eggs as well.

Mix again !

7) When your purée is well mixed, pour it gently in a pie dish and cook it for about 20 minutes at 180°C in the oven: when it’s ready it should smell delicious.
